Hi Rosemary. Good Question. Great to see you're making a good choice for you health.
As a reminder, our bodies are made up of 70% water. I understand you may not be keen on water and realize a lot of people have this same feeling as we sometimes tend to get bored of water. I think of water as a necessity, and would encourage you try adding as much water as possible to your diet. This alone will increase your health substantially and immediately.

Regarding the Caffiene. There are some herbal substitues for coffee, however you may also want to consider.
1. Either choose to go cold turkey or gradually decrease your coffee intake. (Example, if you have 3 cups a day, try having only 2 cups for one month, then 1 cup for one month, then maybe one every couple of days, then once a week, etc. ) Whatever option you choose, make up your mind and stick to it. The power of intention is very effective.

2. Perhaps use a substitute that is a bit healthier instead of caffeine. You can try Green Tea. That has some antioxidant benefits. Also if you are into colder drinks, I recommend some of the new healthy energy drinks. They have natural , time released caffeine, that will give you the same benefits as coffee but will not harm your body. In fact some of them actually have a full spectrum of essential vitamins and minerals as well. This would be my number one choice. Some examples of these are.
    a. Steaz energy drinks
    b. Verve (from Veema) containing the best nutrition around.
    c. FDS energy drinks with vitamins and antioxidants.

Regarding alternatives to water. There really isn't too much that is better than water. However i would recommend fresh vegetable and Fruit Juices. For the full benefit, they Must be freshly juiced. This is actually better than water as it will be fresh juice with natural vitamins and minerals. Any other bottled juice is pasturized, and therefore is not natural.

I hope this helps. Let's keep this conversation going! Let me know what you decide to do!!

So, assuming I want to delete caffeine from my daily diet - or at least sharply decrease my intake - AND I don't care for "just plain water"....what trade-offs can I use. And, how do I minimize withdrawal? Thank you!
